Chili Lime Plantains
This is not your classic plantain recipe. I love the twist that chili and lime add to the plantain. Try this simple recipe; it can be eaten as a side dish or as a snack.

Oven Baked Plantain Stuffed With Chili Corn Carne
I’ve saved the best for last (I’m playing favourites because I got this recipe from my brother). There are no limits to what you can do with this recipe, you can stuff the plantain with whatever catches your fancy. I’ve tried bacon, chicken stir fry, pork stir fry, beans and sweet corn. You can top it with cheese or go without cheese. I love topping this with cheese; my husband, not so much.
Here’s the recipe:
1 ripe plantain
1 small onion (diced)
1/2 diced red bell pepper
1/2 diced green bell pepper
1/2 diced yellow bell pepper
1/4 cup sweet corn
3 carrots (Diced)
2 tbs tomato paste
1 cup of minced meat
salt, chili and complete mix seasoning to taste
Drizzle of olive oil
Preheat your oven at 180C . Peel the plantain and coat with olive oil. Place the plantain on baking paper or foil and place in the oven for 20 minutes. Be sure to turn it around half way through.
While the plantain is cooking, coat a non-stick pan with a drizzle of oil.
Stir fry the onions and add in the minced meat until brown and cooked through. Once cooked, season with salt, chili and complete mix seasoning to taste.
Add in the diced carrots and stir fry for 3 to 5 minutes. Add in the peppers and stir fry for another 2 minutes. Stir in the tomato paste.
Cover the pan and leave to simmer for 5 minutes.
The sweet corn is the last ingredient to be added. Mix it in well and taste. Add salt and spice if needed.
Take the plantain out of the oven; make a pocket in it by slicing it open horizontally from one end to another. Stuff the pocket with as much Chili corn carne as you can fit in.
Top the stuffed plantain with the grated cheese; put the plantain back in the oven for about a minute to allow the cheese melt.
This is best served hot and can be served with a side of chili corn carne (you will have quite a bit left over), all on its own or with some veggies and beans. Again, the possibilities are endless.
